White tea, Pai-Mu-Tan type, from plants of Camellia sinensis var assamica, resulting from experimental work of the Agrarian Development Service of São Miguel. The harvest of the gum, first and second leaves, since tender, is done manually and the processing sumes up to the phase of wilting and drying.
